Brown seaweed reaches 3-4 meters in length and clings to rocks by haptera, outgrowths of the stem that act like tiny suction cups. It is found in abundance along coastlines in the English Channel and the North Atlantic. Discovered accidentally in Scotland in the 1980s, it is now known to be a source of alginic acid, which has gel-like properties. This acid is widely used in food preparation—puddings, icings, creams, cheeses, and baked goods—as well as in cosmetics.
