Crocus is an herbaceous plant that grows to a height of 10-30 centimeters. It has dark purple, lavender, blue, orange, yellow or white flowers that have six petals and three dark red, thread-like stigmas from which the precious spice saffron is collected. This beautiful spring flower is one of the first sources of fresh pollen each year, and the enticing aroma attracts bees and other pollinating species. Growing crocus for their saffron originated in Greece and across Asia, and ancient texts make reference to the spice. The Arabs brought saffron to Spain from Asia Minor in the 10th century. It was later introduced to France during the Crusades in the 12th century. Saffron is the most expensive spice in the world, and is used as a seasoning for fish-based bouillabaisse from Marseille, Spanish paella, traditional Easter brioche, and many other food preparations.
